DIRECTIONS
I placed coconut milk with salt and ghee in the rice cooker. I measured the rice and water and turned it on. Once it was ready then I set it aside.
I peeled potatoes and sliced it into layers. I deep fried the potato layers on medium heat till ready.
I cut some onions with salsa, added cooking oil and turned the stove on to a medium heat. I added some shrimp and let it all cook together. Once the oil started floating on the top then I added the fried potato layers.
I sliced a pineapple, curved out the inside and kept the outside. I then added the coconut rice with shrimp/potato stew. C’est fin!
