     DIRECTIONS
In a bowl, simply mix equal amounts attieke and water and let sit for a minute or two until the water is fully absorbed. Cover attieke and heat in a microwave until warm (about 2-3 minutes.) Season to taste. IÂ simply add 1 tablespoon avocado oil and a pinch or two of salt.
Cut and fry the plantain according to preference.
Cut onions & tomatoes into little squares. Add lemon, oil and salt according to preference. Mix it all together.
Clean the fish, remove the scales and slices lines according to preference. Mix garlic,ginger & maggi together to create a marinating mixture to use on the fish. Let the marinated fish sit for a little bit and put it in the oven on 450 temperature. Make sure to consistently check on your fish so it doesn’t burn.
Fry the onions with tomato paste,salt, cilantro and red pepper together to create some type of stew.
Once the fish is ready then serve it all together with plantain, attieke and the stew.
