I boiled eggs in a different pot. I marinated my fish with ginger and garlic for one hour. I then put oil on a medium low heat till warm. I threw the tilapia into the oil tossed and turned it till to a brown-ish color and placed it aside. I cut onions,egg plant, green pepper, cilantro all together and blended them with tomato paste in a blender. Once I got a nice mixture then I poured them into a pot of warm cooking oil. I let the paste-like mixture cook on medium till the oil was on top. I then added peanut butter and salt. I let the peanut cook on a close watch as I didn’t want the pot burning. Peanut has a way of burning if not paid attention to. After a few minutes of stirring then i added water. I let it cook for a couple of minutes then I added the fish and boiled eggs. I usually like my fish still crispy thats why I always put them in last and only for a few minutes.                                                                                              Side note: I only add egg plant to make my stew more thicker. Its optional. There’s no order to making this. Just play around and find out \what you’re comfortable with.
