Chicken (meat of choice) DIRECTIONS I put the cooking pan on the stove on medium low and let it warm slighty. I added the uncooked roti to the pan. The goal is to let it cook not burn. After it looks slighty cooked then splash some oil on it front and back. Let it cook slowly to your choice of decent brown.
- I cut some onions, added salsa, salt, chili powder, chicken and green pepper into one pot with cooking oil. I turned the stove on medium low and put the pot on top. I boiled eggs in a different pot. I let the stew cook till the oil was on top and the tomato mix at the bottom. I then removed my boiled eggs from the other pot, removed the shell and added them to the stew. Once the boiled eggs caught a little taste of the stew then I turned off the stove.
- I served the stew with the cooked roti.
